This is my very favourite recipe for Oatmeal cookies. Try it out and you’ll see. They are especially lovely with coffee or milk.
Combine:
- 2 cups of brown sugar
- 1 cup of butter
Beat well, either by hand or by electric stand mixer. Add to the mixture:
- 1/2 cup milk with 1 tbsp vinegar
- 4 cups of rolled oats
- 1 3/4 cups of flour
- 1 teaspoon of baking soda
- 3/4 teaspoon of salt
- 1/2 teaspoon cinnamon
Preheat the oven to 375 F.
You can either spoon the cookies dough onto a baking sheet, or you can roll the dough into a log using wax paper and then chill it for an hour and slice it into 1/2 inch slices.
Bake for 8 minutes. The bottoms should be just turning brown, and the cookies will seem like they aren’t quite done. Carefully lift them onto a cooling rack with a thin cookie lifter. In a few minutes, they’ll be perfectly firm and still soft if you get it just right.
